Bay Scallops Veracruz
Ingredients
- 1 pound Bay Scallops, blanched
- 2 Tablespoons onions or shallots, minced
- 1 teaspoon garlic, minced
- 1 Tablespoon fresh cilantro, chopped
- 1/2 teaspoon ground cumin
- 1 small fresh tomato, chopped
- 2 Tablespoons lime juice
- 3 Tablespoons olive oil
Directions
Toss all ingredients mixing well.
Serve immediately or refrigerate.
